Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup sugar
3 ripe, medium to large bananas
1/3 cup unsalted butter, melted and cooled
2 large eggs, lightly beaten
1 tsp vanilla extract
1 cup chocolate chips
Directions
Preheat oven to 350 degrees.
Prepare muffin pan (lightly grease with butter or line with baking liners).
In a large bowl, mash bananas. Add in melted butter and sugar. Add beaten eggs and vanilla extract. Mix until combined.
In a separate bowl, combine flour, baking soda, baking powder, and salt. Mix to combined.
Combine wet and dry mixture. Do not over mix. Add chocolate chips or add-ins of choice. Mix to combine.
Divide batter between 12 muffin cups.
Bake for 20 to 25 minutes or until a tooth pick inserted into the center of a muffin comes out clean and tops are golden brown.
