Breakfast Egg Muffins

Ingredients

  • Eggs

  • Mushroom

  • Spinach

  • Ham (lunch meat)

  • Shredded mozzarella cheese

  • Pepper

  • Salt

  • Optional: seasonings of choice

Directions

  1. Preheat oven to 350 degrees F.

  2. Prepare muffin pan (lightly grease with butter or line with cupcake liners).

  3. With a knife, cut mushrooms and spinach.

  4. Cook mushrooms and spinach over medium heat. Add salt and pepper. (Optional: add seasonings of choice).

  5. With a knife or with your hands, rip lunch meat.

  6. In a large bowl or measuring cup, crack and whisk eggs. Add salt and seasonings of choice. Mix until combined.

  7. Evenly divide toppings in muffin pan – mushrooms with spinach and ham with cheese.

  8. With a measuring cup or a spoon, evenly pour egg mixture into muffin pan.

  9. Place in oven and bake for approximately 15-20 minutes or until a toothpick inserted in the center comes out clean, and tops are golden brown. Let it cool and store in fridge or freezer. Reheat in microwave.
