Mushroom
Spinach
Ham (lunch meat)
Shredded mozzarella cheese

Optional: seasonings of choice
Directions
Preheat oven to 350 degrees F.
Prepare muffin pan (lightly grease with butter or line with cupcake liners).
With a knife, cut mushrooms and spinach.
Cook mushrooms and spinach over medium heat. Add salt and pepper. (Optional: add seasonings of choice).
With a knife or with your hands, rip lunch meat.
In a large bowl or measuring cup, crack and whisk eggs. Add salt and seasonings of choice. Mix until combined.
Evenly divide toppings in muffin pan – mushrooms with spinach and ham with cheese.
With a measuring cup or a spoon, evenly pour egg mixture into muffin pan.
Place in oven and bake for approximately 15-20 minutes or until a toothpick inserted in the center comes out clean, and tops are golden brown. Let it cool and store in fridge or freezer. Reheat in microwave.
